Why two towers, you ask? Well, I was watching LOTR (Lord of the Rings) trilogy last weekend and I realized that I did not remember much of the second installment. I usually just skipped it over to watch my favorite Aragorn be crowned the King in the third installment.... So anyways, I watched LOTR and the name stuck in my head.... and just because I finally found a muffin recipe scaled down for two people ... two towers... get it? :) And now that I think about it ... the two cuties stacked side by side, DID look like two towers .... Ok, enough cheese....
Honestly, I get nightmares and chills when I see leftovers in my refrigerator *shudder* Without judging anyone, my life's philosophy is to eat fresh, minimally processed food. While means bye, bye to the ready-to-eat, ready made foods and hello to a sink full of used utensils to make things from scratch... Well... I never said it was easy. But then, rarely anything in this life is....You know, the cliche about life not being a bed of roses - it is true! Greatness, (in this case, freshness) was never achieved by sitting on the bed. So get off your butt, workout rigorously and relish these good for you muffins ... and the best part, they'll be over before you go for seconds, or thirds .... :)
Banana Walnut Muffins (For Two)
Ingredients:
1/4 cup whole wheat pastry flour
1/4 heaped teaspoon baking powder
1 egg white
2 Tablespoons jaggery or piloncillo or brown sugar
2 Tablespoons melted and cooled, coconut oil
1 teaspoon vanilla essence
1/2 banana, mashed
1 Tablespoon chopped walnuts
a pinch of sea salt
1-1/2 teaspoon Milk (if needed)
1 teaspoon rolled oats (optional)
Method:
1) Preheat the oven to 350 degrees Fahrenheit.
2) Beat egg, brown sugar and coconut oil together to make an emulsion. Add vanilla essence.
3) Combine flour, baking powder and salt in a separate bowl. Mix it with the wet ingredients.
4) Stir in the bananas and walnuts into the batter until combined, taking care not to over mix the batter.
5) Pour equally into 2 pre-lined muffin moulds. Sprinkle it with rolled oats.
6) Bake at 350 for 10-15 mins, or until the muffins are set. Insert a toothpick to check for done-ness.
