Since it was Friday evening, as per our tradition, my husband and I wanted it to be special - foodwise! We were not ready to settle for something bland and unpalatable. Ingredients:
1 6 oz. can tuna chunks in light water
1 small red onion, thinly diced
2 cloves of garlic, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon coarse ground dijon mustard
1 teaspoon dry basil leaves or fresh chopped basil
1/4 cup fresh chopped cilantro
1 pinch of red chilli pepper flakes
1/4 cup good quality plain yogurt, look for thick Greek yogurt
1 handful of breadcrumbs
1/2 lemon, juiced
1 tablespoon extra virgin olive oil
Preparation:
1) Mince tuna chunks in a chopper
2) Heat a non-stick skillet over medium heat. Add a little extra virgin olive oil and add the chopped onion and garlic. Saute until the onions are soft and the garlic is cooked.
3) Transfer the onions and garlic to a bowl and let it cool. Return the skillet to heat.
4) Add the onion/garlic mixture to the minced tuna
5) Add the herbs (basil and cilantro), salt, pepper, breadcrumbs, dijon mustard, lemon juice, red chilli pepper flakes and yogurt. Drizzle a little extra virgin olive oil for binding.
6) Mix and form 4-6 patties, 1 inch thick
7) Drizzle extra virgin olive oil on the warming skillet. Add the tuna croquettes and cook on each side.
